The ancestors of the Sycuan Band of the Kumeyaay Nation existed many centuries ago as a community of people...a Tribe living together, farming, hunting and fishing to survive.

Much has changed since that time. Today the Sycuan Tribe governs its Reservation, owns and operates a Casino and a Golf Resort, and owns a number of other business ventures in the San Diego Region.

ob Purpose:

The Director of Beverage is primarily responsible for leading the management and operations of casino floor service and beverage venues and kiosks to maximize profitability, enhance the guest experience and foster a positive and engaging environment for Team Members. All responsibilities must be completed within all policies, procedures, rules & regulations set forth by Sycuan and the Gaming Commission.

Job Duties and Responsibilities:

  • Maintains the efficiency of bar operations by assigning duties to the floor service management team, communicating pertinent departmental information to staff, regulating alcohol and related product utilization, standardizing recipes, conducting periodic sanitation inspections, monitoring beverage management team, bartenders and service staff performance, correcting out of compliance behaviors, and ensuring departmental and casino wide policies and procedures are followed.
  • Enhances beverage services and ensures competitiveness by researching current cocktail, beer, wine, spirits and beverage trends, analyzing guest preferences, creating and developing menus, recipes, pairing and menu suggestions, ensuring the most advantageous product mix, submitting creations to the Vice President Food & Beverage, implementing approved menus, and keeping product offering fresh and timely.
  • Develops team members by training staff on proper alcohol service, quality standards, and service etiquette, ensuring team members adhere alcohol service policies, monitoring team member performance, conducting performance appraisals, providing counseling, guidance, and corrective action as needed, and generating appropriate data-base transactions and paperwork.
  • Ensures product costs are within established guidelines by preparing annual budgets for assigned areas, reviewing and monitoring monthly profit and loss statements, monitoring inventory usage compared to sales, reviewing proposed purchases for best quality and value, communicating supply needs to purchasing staff, placing supply orders as needed, suggesting appropriate changes to product mix to enhance profitability, and implementing approved changes.
  • Hires qualified b ar managers, bartenders and service personnel by communicating staffing needs and advertising requirements to Human Resources, and interviewing and selecting most qualified applicants. Job Specifications:

    Education and Experience:

    Essential:
    • Bachelor's Degree in Hospitality or related field or equivalent experience
    • 5 years of beverage and/ or food and beverage department head and/or executive experience in a casino, resort, hotel or cruise ship environment Desirable:
      • Casino Beverage floor service experience
      • Bartending experience
      • Accredited Wine, Beer or Spirts certifications (Sommelier, Cicerone, etc.) Skills and Knowledge:

        Essential:
        • Ability to create recipes and menus and to prepare a wide range of cocktails
        • Ability to apply creative concepts and mixology components to cocktail and beverage preparation and presentation
        • Ability to analyze beverage services and identify improvement needs
        • Ability to establish and maintain inventory pars and inventory
        • Ability to interact effectively with team members and guests
        • Ability to provide leadership, mentoring and guidance to staff
        • Ability to communicate effectively in the English language
        • Ability to draft detailed process and training documents
        • Ability to make public presentations and communicate through various media
        • Ability to maintain professionalism and composure
        • Ability to complete forms and documents
        • Ability to perform moderate to complex mathematical calculations
        • Excellent English writing skills
        • Working knowledge of Microsoft Suite to include Word, Excel and PowerPoint
        • Ability to understand and follow verbal directives and written directions
        • Ability to accept constructive criticism
        • Ability to lift up to 25 lbs.
        • Ability to stand for up to eight hours at a time
        • Ability to work in a smoking environment
        • Ability to bend and stoop
        • Ability to appear for work on time Desirable:
